Would this gimx setup be possible?

Looking for the image below would it be possible to create a version with a USB HOST SHIELD in place of the PC?

This would require writing input drivers, which is a lot of work. Even if the HID standard is now widely used, many devices requires quirks to work.
GIMX leverages the input drivers of the operating system, which is a lot easier.
And anyway, small Linux platforms are the future. They can do a lot more than an Arduino + Host shield, for about the same price.

Will the orange pi zero h2 quad core 256 mb give account to run the gimx for xbox one? Because its price is attractive at $ 7

GIMX can already run on this kind of hardware using a DIY USB adapter. It may require compiling the source code.
GIMX cannot leverage on-board OTG interfaces yet, but support is planned for GIMX 7.

It would be great to be able to eliminate the DIY adapter and to use the USB OTG would make a Hardware cleaner
